Braised fish with snow vegetables

This fish with snow vegetables is Ningbo style. It is a combination of two traditional Jiangsu and Zhejiang dishes, "fish in soup with snow vegetables" and "fish in brown sauce". The former is fresh and salty and palatable, while the latter is fragrant and delicious. The charred flavor of fish skin, the tender fish, and the support of the soup, salty and sweet, is an essential feast dish!

Snow vegetables have a crisp texture and a special fresh flavor. It is used to cook fish soup. Besides salty and fresh, rice wine (cooking wine) is also an important ingredient in the taste of Ningbo.

 


From the pickled fish to the final seasoning, the rice wine sublimates the flavor of the whole dish. The fish is tender and not fishy at all. The fried fish is wrapped in fresh and salty snow vegetables, which is delicious after appetizing and serving the meal.

                      1- Handle fish

Ingut the fish, drain the surface of the water, and flower cut on the surface of the fish.

2 - pickled

Sprinkle the fish with salt and let the wine marinate for 10-15 minutes.

3 - Cut the ingredients

Dice the meat, slice the ginger and garlic, and cut the scallion and dried pepper into sections.

4-Cooking fish

Put some oil in the wok. Lower the fish in the wok over high heat, do not stir. Fry until golden on both sides.

5-Stir the ingredients

Add green onion, ginger, garlic, dried chilli and snow cabbage and stir fry.

6-Seasoning

Add fish, add yellow rice wine(cooking wine), soy sauce and Season with dark soy sauce.

7-Braise
